Swiss steak is typically made by slow-cooking a tough cut of beef in a tomato-based sauce until it’s tender.

Ingredients:

1.5 to 2 lbs beef round steak (about 1 inch thick)

1/4 cup all-purpose flour

1 tsp salt

1/2 tsp black pepper

1/2 tsp paprika (optional)

2 tbsp vegetable oil

1 medium onion, sliced

1 bell pepper, sliced (optional)

2 cloves garlic, minced

1 (14.5 oz) can diced tomatoes (with juices)

1 cup beef broth (or water with bouillon)

1 tbsp Worcestershire sauce

1/2 tsp dried thyme or Italian seasoning (optional)

Instructions:

  1. Prep the steak:

Trim fat from the steak and cut it into 4-6 serving pieces.

Combine flour, salt, pepper, and paprika. Dredge each steak piece in the flour mixture and pound lightly with a meat mallet to tenderize and embed the flour.

  1. Brown the meat:

In a large skillet or Dutch oven, heat oil over medium-high heat.

Brown steak pieces on both sides (3–4 minutes per side), then remove and set aside.

  1. Sauté vegetables:

In the same pan, add onion, bell pepper (if using), and garlic. Sauté for 3–5 minutes until softened.

  1. Add liquids:

Stir in diced tomatoes (with juice), beef broth, Worcestershire sauce, and seasonings.

Return the steak to the pan and spoon some sauce over the top.

  1. Simmer:

Cover and reduce heat to low. Simmer for 1.5 to 2 hours, or until the steak is fork-tender.

Alternatively, you can bake it in a 325°F (160°C) oven for the same amount of time.

  1. Serve:

Serve over mashed potatoes, rice, or egg noodles with the sauce ladled on top.
