- 3 oz smoked salmon
- ½ avocado, sliced
- ½ cucumber, shaved into ribbons
- 1 soft-boiled egg
- 1 tbsp olive oil
- 1 tsp lemon juice
- Salt & pepper to taste
Instructions:
- Arrange salmon, avocado, and cucumber in a bowl.
- Soft-boil an egg (6 minutes), peel, and place on top.
- Drizzle with olive oil and lemon juice.
